Blueberry Buckle

For the past few weeks I’ve been buying huge clamshell containers of fresh blueberries from Costco for a ridiculously low price. We love eating them as is, but M has been itching for some kind of baked item using the blueberries. My mom and I used to make something called Blueberry Buckle for church coffee hour a lot when I was younger. It’s sort of like a combination scone/coffee cake but has the best of both worlds. Late Monday evening, this was baking in the oven so that it would be ready for Tuesday Morning. It turned out perfectly delicious.

Blueberry Buckle (or in my family, Blueberry Bucle)
serves 9-12

Ingredients:
1/4 lb butter
1 egg
3/4 C sugar
1/2 C milk
2 C flour
2 C fresh blueberries
1/2 t salt
2 t baking powder

Crumb Ingredients:
1/4 C soft butter
1/3 C flour
1/2 C sugar
1/2 t cinnamon

Preheat oven to 350 degrees.

Cream the butter and the sugar. Add the egg and beat well. Stir in the milk, flour, salt, and baking powder. Gently fold in the blueberries. Fill a prepared 8″ by 8″ (or 9″ by 9″) glass baking dish with the mixture.

Combine crumb ingredients in a small bowl until combined and the consistency of coarse crumbs. Sprinkle over the top of the batter.

Bake for 35-40 minutes, or until the cake passes the toothpick test. Allow to cool slightly before serving.

    Yum! My mouth is watering now. My oldest has been asking me to make blueberry muffins, but he enjoys eating the blueberries on their own too much. LOL
