Makes 18 cupcakes
— These were a St. Patty’s Day tradition for my husband’s family growing up. They can be made for any occasion, they just took on the name of St. Patty’s Day cupcakes because of the slight green tint of the batter.
2 beaten eggs
1 1/4 C milk
1/2 C cooking oil
1 t vanilla extract
1 3/4 c flour
1 small box instant pistachio pudding mix
3/4 C chocolate chips
2/3 C sugar
2 1/2 t baking powder
1/2 t salt
Combine eggs, milk, oil, and vanilla.
Stir in flour, pudding mix, chocolate chips, sugar, baking powder, and salt just until the flour is moistened.
Fill muffin cups 2/3 full and bake at 375 degrees for 18-20 minutes or until golden brown.
Cool and then frost with buttercream or creamcheese frosting. Sprinkle with green sugar.
